Simple Lamb Stew

Simple Lamb Stew is a quick, easy, healthy and (despite the name) vegetable filled dish that will fill you up. Take a look at the more traditional Irish Stew recipe as well.
The idea here is to give the rich taste of lamb without spending a lot of money. This recipe uses less than 1lb of lamb chunks and adds lots of vegetables.
Ingredients
- 1/2 to 1 lb lamb stew meat (pork or beef could work as well)
- some olive oil & butter
- 1/4 cup or so of flour
- 2 cups of beef stock
- water
a combination of roughly chopped (pick & choose)
- celery
- carrots
- leeks
- onions
- potatoes
- parsnips
- celery root
- fennel
- mushrooms
herbs
- thyme
- bay leaves
- salt & pepper
Process
- preheat oven to 350 F
- add oil and butter to med high cast iron skillet
- brown lamb to caramelize but not cook
- remove lamb
- add about 1/2 cup of beef stock and return to simmer while scraping the bottom of the skillet
- spread around the flour and stir and mix to make a rich nut brown roux
- add the rest of the beef broth
- add chopped vegetables
- add water to ALMOST cover stew ingredients
- cover with aluminium foil
- cook in oven for 1 hour
- let cool for 15 minutes, then serve
